Fall 2013 Recipe Contest Winner: Adrenal Soup

green beansCongratulations to Gail for her tasty and healthy “Adrenal Soup” recipe.

Serves: 4

Ingredients: 

  • 16 oz green beans, fresh or frozen
  • 1 cup chopped celery
  • 1 chopped zucchini
  • 1 medium yellow onion, chopped
  • 1 cup low-sodium tomato juice
  • 1 cup filtered water
  • 2 Tablespoons honey
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • pepper to taste

Directions:

Combine all ingredients in a large pot (Dutch oven) and let simmer on the stove for about 1 hour.
